Premium Oscietra caviar comes from the Russian Sturgeon (an ancient species originally native to the Black Seat, Caspian Sea, and Azov Sea). It typically requires 10+ years to mature and is a medium size sturgeon weighing between 20-30kg. The caviar size is between 3.0-3.2mm. Many consider this to be one of the more refiend caviar with similar flavors as wild caviar.
